Erewhon White Bean and Kale Salad Recipe Dupe
If you’re like me and have been placed on LA food-tok, I’m sure you have seen about a million videos of people raving about the white-bean and kale salad from Erewhon. For those of you who either don’t live near an Erewhon or just enjoy cooking, here is a recipe dupe that you can make at home! Although it is pretty simple, it is truly the easiest salad to whip together and tastes so scrumptious that you’ll understand the hype.
Ingredients
kale
white northern beans
pepitas
sunflower seeds
hemp seeds
avocado (diced)
dressing:
1/4 cup avocado oil
1 lemon
1 tbs dijon mustard
1 tbs maple
1 clove of garlic (minced)
salt & pepper to taste
What to do
Mix together all of the ingredients for the dressings and set aside. (Feel free to adjust the quantities of any ingredients based on your personal preferences. Whether you prefer your dressing more tart, sweet, or salty, you can tailor this recipe to suit your taste. Don't hesitate to experiment with different ratios until you find the perfect balance for you.)
Cut up your kale & place into a large bowl. Massage the kale for 2-3 minutes with a drizzle of olive oil & a sprinkle of salt. This helps to break down the fibers, making it easier to eat & also less bitter tasting.
Toast the pepitas and sunflower seeds in a pan until golden & then add to kale. (Feel free to measure with your heart. I personally like a lot of toppings.)
Add your white northern beans, hemp seeds, and diced avocado.
Top with your dressing and thoroughly mix everything together before serving.
*My optional touch: Add a sprinkle of parmesan cheese on top!*
