Cheesecake Cookie Bars
I’m back again with my series of sharing old family recipes! These cheesecake cookie bars are a new favorite of mine and are extremely easy to whip up, yet look like they took way more effort than they actually did. If you already are a cheesecake fan, you need to try these out because you’re going to be obsessed!
Ingredients:
1/3 c brown sugar, packed
1/2 c chopped walnuts
1 c all-purpose flour
1/3 c butter, melted
1 8 oz. package of cream cheese, softened
1/4 c sugar
1 egg
1/2 tsp grated lemon rind
1 tbsp lemon juice
1 tbsp cream or milk
1 tsp vanilla
What to do:
In a large bowl, combine brown sugar, buts, and flour.
Add melted butter and blend thoroughly until light and crumbly.
Reserve 1 cup (or a little less) of the mixture for topping and firmly press remainder into an 8x8 inch pan.
Bake in a 350° F oven for 12 to 15 mins.
Cream together cream cheese and sugar.
Add remaining ingredients and beat until smooth.
Pour cheese mixture onto baked crust.
Top with reserved crumbs and bake for an additional 25 to 30 minutes.
Cool and cut into 2-inch squares (Makes 16 cookies).
