Cheesecake Cookie Bars

I’m back again with my series of sharing old family recipes! These cheesecake cookie bars are a new favorite of mine and are extremely easy to whip up, yet look like they took way more effort than they actually did. If you already are a cheesecake fan, you need to try these out because you’re going to be obsessed!

Ingredients:

  • 1/3 c brown sugar, packed

  • 1/2 c chopped walnuts

  • 1 c all-purpose flour

  • 1/3 c butter, melted

  • 1 8 oz. package of cream cheese, softened

  • 1/4 c sugar

  • 1 egg

  • 1/2 tsp grated lemon rind

  • 1 tbsp lemon juice

  • 1 tbsp cream or milk

  • 1 tsp vanilla

What to do:

  • In a large bowl, combine brown sugar, buts, and flour.

  • Add melted butter and blend thoroughly until light and crumbly.

  • Reserve 1 cup (or a little less) of the mixture for topping and firmly press remainder into an 8x8 inch pan.

  • Bake in a 350° F oven for 12 to 15 mins.

  • Cream together cream cheese and sugar.

  • Add remaining ingredients and beat until smooth.

  • Pour cheese mixture onto baked crust.

  • Top with reserved crumbs and bake for an additional 25 to 30 minutes.

  • Cool and cut into 2-inch squares (Makes 16 cookies).
