Here's exactly how to make it with our special twist on the recipe!
Ingredients
1 pound of chicken breast
olive oil
1 - 2 bell peppers
1 onion
1 box of pasta (I used fusilli)
1 1/2 cups of cream
1/2 cup pecorino romano or parmesan cheese
1/2 tube of tomato paste
1 1/2 tbsp onion powder
1 1/2 tbsp garlic powder
1 1/2 tbsp paprika
1 1/2 tbsp salt (or to taste)
1 1/2 tbsp chipotle powder
1 1/2 tbsp oregano
a few sprigs of rosemary
What to do
prepare bell peppers and onion by dicing them into small cubes & set them aside
cut chicken breast into small cubes and place in a separate bowl
cover the cubed chicken with a drizzle of olive oil, 1 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp paprika, salt, 1 tbsp chipotle powder, 1 tbsp oregano, and a few sprigs of rosemary
mix until chicken is fully coated
drizzle a large pan on medium-high heat with olive oil & cook the chicken for about 15 minutes or until fully cooked
while the chicken is cooking, start cooking your pasta based on the instructions of the packaging & strain it once it is done cooking (also make sure to save at least a cup to a cup and half of pasta water for the sauce)
once the chicken has finished cooking, place into a new bowl and set aside for now
in the same pan, add in your diced onions and bell peppers and cook them until they start to become tender and the onions begin to look translucent
then add your tomato paste, and once that is combined with the bell peppers & onions, also add in your cream to the pan and mix
if sauce is becoming too thick, gradually add in pasta water as need to loosen it up
then mix in 1/2 tbsp onion powder, 1/2 tbsp garlic powder, 1/2 tbsp paprika, salt, 1/2 tbsp chipotle powder, 1/2 tbsp oregano, and pecorino romano/parmesan to your sauce
now add in your strained pasta and chicken into the pan and mix until fully combined
serve & enjoy (top with more cheese, chili flakes, and basil)
