My All Time Favorite Holiday Cookies

Happy Holidays, everyone! This is one of the best times of the year, mainly because of all the yummy food that’s around, so I thought I would share the recipe for one of my favorite holiday cookies that I am obsessed with. I guess these are technically just Russian tea cakes, but they look like snowballs, which makes them extra festive for this season. My mom and I make these every year and they are always a hit, but be careful because you can easily down like 15 of these without even realizing. Enjoy <3

Ingredients:

  • 1 c butter

  • 1/2 c powdered sugar

  • 2 1/4 c flour, sifted

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 3/4 c almond flour

  • extra powdered sugar & sprinkles

What to do:

  • In a large bowl, mix butter, 1/2 c sugar, vanilla, and salt on low speed for about one minute.

  • Make sure the mixture is blended well, then gradually add flour at low speed until just combined.

  • Stir in almond flour.

  • Roll dough into 1 inch spheres and place them 1 inch apart on your baking sheet.

  • Bake at 350°F for 8-10 minutes until firm to touch, but not brown in color.

  • While warm, roll in powdered sugar (optional: and sprinkles) before serving
